Vegan Pumpkin Soup

Step 1: Cut the pumpkin, potatoes, carrot, onion, and tofu or chicken into chunks.
Step 2: Season the veggies and meat with fennel, salt, pepper, and paprika. Either roast them with 1 tbsp of oil until tender, or boil them in 1.5-2 cups (300-400 ml) of water until cooked through.
Step 3: Add the cream to the cooked vegetables and meat. Blend everything with an immersion blender until smooth.
Pro tip: Adjust the seasoning to your taste after blending for the perfect flavor.
