Quick Breakfast Egg Sandwich

Ingredients: (for 1 serving)

  • 2 slices of whole grain bread
  • 2 eggs
  • 2-3 slices of tomato
  • 3-4 olives
  • 1 tsp butter or cream cheese
  • Mixed greens

Instructions:

Step 1: Beat the eggs with your favorite spices. Pour the mixture into a pan with melted butter and cook an omelet, forming it into a square shape.

Step 2: While the omelet is cooking, toast the bread slices in a skillet or toaster. Spread cream cheese on one side of each slice.

Step 3: Place the omelet on one slice of bread. Top with tomato slices, olives, and mixed greens.

Step 4: Close the sandwich with the second slice of bread.

Pro tip: For an extra kick, add a dash of hot sauce to the omelet mixture or sprinkle some crushed red pepper flakes.
