Strawberry Banana Pancakes

Ingredients (for 1-2 servings):

  • 1.75 oz (50 g) rice flour
  • 1 egg
  • 0.7 fl oz (20 ml) milk
  • 0.5 tsp baking powder
  • 1 banana
  • 1 tbsp cocoa powder
  • 1 tbsp sweetener (optional)
  • 1 tbsp protein powder
  • Strawberries for garnish

Instructions:

Step 1: Start by mashing the banana in a bowl. Add the egg and mix well. Gradually add the rice flour, mixing until smooth. Toss in the baking powder, cocoa powder, sweetener if you like it sweet, and about 20 ml of milk (you can use kefir, buttermilk, natural yogurt, or even water). The batter should be thick but pourable, like a slow-moving lava.

Step 2: Preheat a non-stick pan over medium heat. No need for oil if you have a good non-stick surface! Drop a heaping tablespoon of the batter onto the pan to form small pancakes. Cover the pan with a lid.

Step 3: Cook the pancakes until bubbles start to appear on the surface. This is your cue to flip them over. Cook for another 1-2 minutes on the other side until they’re golden brown and cooked through.

Step 4: Stack the pancakes on a plate and garnish with fresh strawberries. The fresh berries add a delightful contrast to the rich chocolatey flavor.

Pro tip: For extra fluffy pancakes, let the batter sit for a few minutes before cooking to let the baking powder work its magic.

Possible substitutions: If you don’t have rice flour, you can use whole grain, buckwheat, oat, coconut, or flax flour.
