Vegan Gluten-Free Meatballs (6 patties)

Ingredients (for 1-2 serving):

  • 7 oz (200 g) green buckwheat
  • 1 carrot
  • 5 green onions
  • 2 tbsp flax seeds
  • 3 tbsp green buckwheat flour
  • 1/4 tsp salt
  • Spices to taste
  • 2 garlic cloves
  • Coconut oil for frying

Instructions:

Step 1: Soak the green buckwheat in warm water for a few hours or use pre-sprouted green buckwheat. Rinse the buckwheat well and drain. The buckwheat should be soft and easily crumble in your hands.

Step 2: Blend the buckwheat into a puree. Finely chop the green onions and garlic, and grate the carrot.

Step 3: In a bowl, combine the buckwheat puree, grated carrot, chopped green onions, flax seeds, salt, and your favorite spices. The flax seeds will act as a binder instead of eggs.

Step 4: Mix well and add the green buckwheat flour. The mixture should be moist but not too stiff (otherwise the patties will be hard).

Step 5: Form small patties from the mixture. Heat a skillet with coconut oil (or any neutral oil).

Step 6: Fry the patties on medium heat under a lid until golden brown on both sides, about 2-3 minutes per side.

Pro tip: Serve these patties with a side of your favorite vegetables for a balanced meal.
